Ingredients
  • Zucchini - 1 1/2 lbs
  • Flour - 1 cup
  • Milk - 1/2 cup
  • Cayenne - 1/2 tsp
  • Salt - To taste
  • Pasta Sauce - 1 1/2 cup
  • Mozzarella Cheese - 1 cup (grated)
  • Parmesan Cheese - 1/2 cup (grated)

METHOD:

Preheat oven to 360° F

Wash and cut off the stems of the zucchinis but do not peel. Slice ½ inch thick. In small bowl, mix flour, milk, cayenne pepper and a sprinkle of salt to make batter. In large skillet, pour enough oil to come up to about 1/8 ", and heat till small ripples form. Dip zucchini slices in batter then place in hot oil. Turn each slice when light brown.

Arrange a layer of fried zucchini In oven-proof dish of the appropriate size and spread some of the pasta sauce over, then sprinkle about half of the mozzarella and parmesan over. Continue with another layer of the remaining zucchini, the pasta sauce and the rest of the cheeses. Bake in oven for about 25 minutes till cheese is slightly browned and the whole casserole is bubbly.

Remove from oven. Serve hot with boiled pasta of your choice.
