Ingredients
  • Salted Codfish - 1 lb.
  • Boneless Chicken - 1 lb.
  • Onion - 1 Large (chopped)
  • Garlic - 3 Cloves (Crushed)
  • Scotch Bonnet Pepper - 1 Sliced
  • Tomato - 1 Medium (chopped)
  • Scallion - 2 Stalks (sliced)
  • Thyme Leaves - 2 tsp.
  • Red Sweet Pepper - 1 Small (diced)
  • Rice - 3 Cups

METHOD:



Rinse fish under cold running water and soak covered in water for 4 to 5 hours. Then remove any skin and bones, and flake. Slice chicken and sprinkle lightly with salt.

In large pot, heat cooking oil. Sauté onion, garlic, pepper, tomato, scallion and thyme till soft. Add chicken and cook till opaque. Add fish and continue cooking for 5 minutes. Add the rice along with 4 cups water.

Turn heat to low and cover pot tightly. Allow water to absorb and rice to get tender. DO NOT STIR.

Serve hot.
