  • Simple Syrup - 1/2 cup (made with brown sugar)

METHOD:

A flavor secret to mixed drinks is to make simple syrup and have it standing by in the fridge. Not only does it mix in instantly, but the boiling adds a flavour dimension.Make the syrup using either white or brown sugar, as needed.

Place teabags in a heatproof container. Bring water to a rolling boil, and immediately pour 5 cups over the bags. Cover and allow to cool completely, leaving the bags to steep in the water.

Remove the bags and squeeze out all the liquid. Add the simple syrup and passionfruit juice. Chill. Serve in tall glasses over ice.

Yields about 7 cups.

SIMPLE SYRUP
In a heavy saucepan, combine 2 cups brown sugar and 2 cups water. Bring to a boil and simmer for about 10 minutes. Cool completely. Pour into a container, cover and store in the fridge.

Yields about 1 quart
