• Chicken - 3 lbs. (jointed)
  • Salt - To Taste
  • Ginger Root - 2 ozs.
  • Dark Soy Sauce - 1 tbsp.
  • Garlic - 4 cloves (peeled)
  • Scotch Bonnet Pepper - 1 large
  • Scallions - 5 stalks (peeled)
  • Fresh or Dried Thyme - 1 tbsp, fresh or 1 1/2 dried
  • Pimento Seeds - 2 tbsp. (ground)


Preheat oven to 350⁰F. Peel and juice ginger with 1/2 cup of water.  Squeeze through a strainer.   In a blender, combine ginger juice with next 6 ingredients.  Blend for a minute.

Sprinkle chicken parts with salt. Pour blended seasoning over chicken and rub well into all sides of the meat.  Place in a single layer in a large roasting pan with about 1 cup of water in the bottom and place in oven.   Roast for about 60 minutes. Serve hot . Serves 6.

Recipe can be doubled.
