The hallmark of a Jamaican Easter

Sweet and delicious laden with fruits and spices the bun is symbolic of Easter but loved all year round. This version is quick, easy to bake and tastes better the next day. Jamaicans especially enjoy bun with a slice of cheese.  


  • ½ lb raisins
  • 2 ozs. Currants
  • 2 ozs Mixed Peel
  • 2 cups All Purpose Flour
  • 2 tsps. Baking Powder
  • 6 ozs Brown Sugar
  • 1 egg (slightly beaten)
  • 1 cup milk
  • 2 tbsps corn syrup
  • 1 tsp Grated Nutmeg
  • ½ tsp Ground Anise
  • 1 tsp Cinnamon
  • 2 tsp Vanilla


  1. Preheat oven to 350°F
  2. Combine the fruits and all other ingredients in a large bowl. Mix well with a large spoon.
  3. Pour batter into a greased loaf tin.
  4. Bake for about 25 minutes or until a knife inserted in middle comes out clean.
  5. Cool completely.
  6. The bun will taste even better in the following days.
