Ingredients
  • Chocho - 2 medium
  • Chicken Broth - 3 cups
  • Milk - 2 cups
  • Butter - 2 tbsp
  • Flour - 3 tbsp
  • Cayenne - 1/4 tsp
  • Parsley - To taste (chopped)

The chocho also called chayote or cristophene is a green pear-shaped vegetable with a mild flavour belonging to the melon family.

METHOD:

Peel, halve and seed chochos. Cut in thin slices. In saucepan, place chicken broth over medium heat. Add chocho and simmer gently till tender. In the meantime, make white sauce. In small saucepan, melt butter over medium heat and add flour.

Cook flour, stirring then add milk. Whisk constantly to prevent lumps until milk comes to a boil. Combine white sauce and broth mixture and add cayenne. Simmer gently for about 5 minutes. Serve hot.

Garnish each serving with a sprinkle of chopped parsley.

Serves 4.
