Ingredients
  • Chicken - 1 lb (ground)
  • Celery Salt - To taste
  • Onion - 1 medium (diced)
  • Scallions - 2 stalks (thinly sliced)
  • Garlic - 2 cloves (minced)
  • Scotch Bonnet Pepper - 1 small (sliced)
  • Bay Leaf - 1
  • Thyme Leaves - 1 tsp.
  • Tomato Sauce - 14 oz can
  • Chick Peas - 1 can

METHOD:

In medium saucepan, heat oil and add onion, scallion, garlic, pepper and thyme. Saute until limp and add ground chicken. Add celery salt to taste. Cook stirring so there are no lumps and chicken is opaque. Add bay leaf, tomato sauce and chick peas. Add a can of water, stir, lower heat and simmer for about ½ hour. Stir occasionally. Serve hot.

Serves 4-5.
