Ingredients
  • Callaloo - 4 Cups (Chopped)
  • Cooking Oil - 2 tbsps.
  • Salt - To taste
  • Onion - 1 small
  • Scallions - 2 stalks (sliced, including the green tops)
  • Garlic - 1 large clove (crushed)
  • Scotch Bonnet Pepper - 1 tsp (finely diced)
  • Thyme Leaves - 1 tsp.fresh or 1/2 tsp dried
  • Eggs - 2
  • Cream Cheese - 3 ozs.
  • Filo Pastry - 4 sheets

METHOD:

In skillet, heat cooking oil and saute onion, scallion, garlic, pepper and thyme. Add callaloo and about ¼ cup water, sprinkle with salt to taste, cover and steam for about 12 minutes. Remove and set aside to cool.

Line a 7"x10" baking pan with the filo pastry leaving enough to cover the top. Beat the eggs and cream cheese together till smooth and combine with the steamed callaloo. Pour over filo in baking dish, smooth out, and cover with remaining filo. Bake in preheated 350F oven for about 25 minutes or until pastry is nicely browned.
